recommend a healthy veg oriented cookbook?

for my mother, who has just been diagnosed with copd and mild heart disease. she need to lose about 4 stone and go easy on red meat etc.

she likes to attack these things as projects so was after an inspiring cookbook. lots of salads, soups etc, not necessarily veg but with lots of veg recipes

was thinking of the Ottolenghi book, any other recs?

ottolenghi very good. Try Hugh Fearnley's veg book. As much as I hate him for doing one there are some keepers in there.

Another vote for Hughs latest. I have to feed a carnivore, a pescatarien and two veggies with one meal and there is usually something in there to please us all.

Hugh Fairly-Longname's book is aces. ALso look on Able & Cole website for ideas - perhaps a veg box is what she needs to give her new inspiration? NB veggie recipes are often chock full of cheese so may not be what she is looking for for the weight loss aspect. Quorn Mince is extremely low fat and can be used in "normal" recipes eg Spag Bol, Chilli etc and may not be such a culture sshock? Quorn Sausages good too (not keen on the "chicken" pieces though!)
