how shall i keep this lemon sole so i can have it on sunday?

i have 2 packs of lemon sole fillets which have a bbe of saturday. they are in teh fridge but are suitable for home freezing. i need to have them on sunday but will be away from saturday cmidday until sunday early evening. whats the best way to store them so they last til sunday but also so that i can defrost and cook them quickly sunday night?

Freeze them, and defrost in cold water.

Freeze today, take out of freezer and put in fridge before you go on Saturday. Will be perfect Sunday evening
