Can potatos be cut in advance or will they go brown?

I want to pre-cut some potatos for making oven chips about an hour before I will actually need them. Can I do this or will they go brown and yucky?

they'll be ok if you put them in a pan of cold water.

put them in some cold water and cover them - they'll be fine - then just dry them when you need them.

We peel the potatoes at work during the night shift and leave them in cold water, and I've been known (at christmas) to peel the potatoes late Christmas eve so I'm not faffing Christmas day.

I always peel potatoes in the morning when I have more time and leave them in a pan of cold water on the hob ready for tea. Please somebody let me know if I am endangering anybody

qoq my mum always does that at christmas too! in fact, she does all the veg and leaves it in cold water

just make sure you don't have the cooker on underneath - ie that's it's not somewhere where the water can get warm - or they (very slowly) start to cook.
