hi, ive got two bits of smoked haddock, any ideas what i make with it?

Made pasta fishy bake with haddock last night. Poach haddock in milk or cook in microwave. Cook pasta shapes then add chopped carrot, leeks, green beans last few mins. Drain pasta a veg and put in big ovenproof dish. Flake haddock and add 'juice' it cooked in to pasta mix. Then put in a few tablespoons of creme fresh, small handful of grated cheddar and teaspoon on english mustard. add fish to mixture and stir. Top with a bit more grated cheese and stick in over for 25 mins. Nice with mashed root veg.

Ooh - I've just made something from a cookbook I was given for Xmas - Roast chicken and other stories.

Based on 2lbs haddock:

You lightly poach the haddock in 1pt double cream and 1/4pt milk, drain, flake and reserve the liquid.

The layer in a dish with thinly sliced potato (2lb), 4 thickly sliced tomatoes, chopped parsely and the cream/mile mixture (into which you have stirred 3cloves of finely chopped garlic.

finish with potatoes, grate nutmeg on top, then bake for 20mins at gas 7 and then 40 at gas 5.

Think it's going to be yummy!

a variation on this

is v easy

2 Smoked Haddock Fillets skinned and cubed 1 small Onion chopped
1/2 pint or so milk
1 pinch Salt
2 Potatos peeled and chopped
Black pepper
handful Peas cooked (optional)
Butter

1.Melt the butter in a large saucepan. Add the onion and fry for 5 minutes. Stir in the warm milk, veg and potato bring to the boil, reduce the heat, cover and simmer for 5 minutes.
2.Add the fish, and cook for a further 15-20 minutes until the fish and potato are tender.
3.Season with salt and pepper

chopped parsley is nice with it

tell you what its also gorgeous as a baked potato filling. cook it in the oven for ten - 15 mins, in foil. flake the fish into a bowl and mix with some fromage frais/creme fraiche/sour cream, a tsp of wholegrain mustard, black pepper, parsley.
