Freezable Salmon Suggestions?

I have just taken a big bit of salmon out of the freezer. Tonight we are going to cut off two fillets and top them with parmesan breadcrumbs, but it will all need cooked and ideally I would like the other bit to go back in the freezer in a 'ready meal'. Something healthyish would be good. Any suggestions ladies?

Salmon and broccoli pasta bake (cooked flaked salmon plus steamed broc in white sauce with macaroni or fusili) I like to top with breadcrumbs, cook for 20 mins, portion it for double servings into Tupperware then freeze. Reheats beautifully in microwave after defrosting overnight.

If I have puff pastry then I do the same combination but fold it into the pastry (omit the pasta!) and it's a salmon puff.

Or you could gently poach the salmon, flake it then freeze it spread out on a baking sheet then store in a bag in freezer so you could just have a bit of it to add to salads, sandwich, etc.

Fishcakes? Combine with mash, breadcrumb, fry then freeze. Reheat from frozen in a hot oven

Oh I am loving the puff pastry idea! And, of course, fishcakes. Why didn't I think of that?! Looks like I'll be busy tonight! Thanks Pinky

DS1's fave joke:
How do you make a salmon puff?
Chase it round the Atlantic Grin
