I have pork sausagemeat stuffing and mince pork. I was just going to kneed it all together with some finely chopped onion and stick it in puff pastry. Will this be nice? It's not something I've done before but have the meat in the fridge. Any tips or ideas please let me know!

I think that you may find, if doing a meat loaf like that, that the middle will not be cooked through. Personally, I would throw a handfull of herbs is and then part-fry it off before putting in in the pastry. In fact, I would probably do it as a sausage roll.

you will definatly need to fry it off first. I would do as suggested above sausage rolls or pasties even. or a meatloaf without the pastry

I have done what you are suggesting and came out fine. I add a bit of mustard, garlic and some herbs and it was delicious.
