Chicken soup

Right, how do I make chicken soup from a chicken carcass and veg? Do I just boil it all up together or do I have to make chicken stock from the bones first?

Make a stock first is best. I would then sweat an onion, celery and carrot, and maybe a clove of garlic fro about ten minutes, add a potato or two, the chicken that you've taken from the carcass, simmer for twenty minutes or so, add some fresh thyme, a bay. Before whizzing (if you are whizzing), fish out the herbs and bay and whizz. Drop of cream for luxury, or not.
