Anyone got any good recipes using broccoli and leeks?

I put leeks in Cottage pie instead of using onions. It is really, really tasty.

Have you got any stilton or other blue cheese to make broccoli and stilton soup ? (With leeks as well Smile)

yes, we do hae a load of stilton - does it freeze? They were actually bought for DH to make the soup but he didn't in the end

Yes freezes v well. I found a good leek/ broccoli soup in the current sainsburys mag ( the free one ).
Also substituted smoked cheese for the Stilton and it was good.

Cheesy pasta bake. Make the white sauce by sauteeing the leeks in butter, add flour when it's soft, add milk and stir until thickened. Add cheese towards the end. At the same time heat some pasta and add the brocolli florets in the last 4 minutes of cooking. Drain the pasta and add the cheesy leek sauce. Grate some more cheese over the top and put it in the oven at gas 5 for 20 - 25 minutes.

Brocolli and leek is a fantastic soup combination on its own. I wouldn't even add the stilton, just plenty of garlic and stock.

Quiche? Good for lunches for a couple of days if left in the fridge, or you can cut it up and freeze individual portions so you can just grab the occasional one. I don't have a recipe I'm afraid but I'm sure t'interweb has one somewhere.
