Have nothing here so can go and buy whatever i need.

Not fussed on red meat
Needs to be cooked in an hour or there abouts

I'm making spinach and ricotta cannelloni (using ready made pancakes instead of pasta though) with a tomato sauce and grated cheese on top. Easy, cheap, healthy and delicious.

chicken wrapped in parma ham, with salad and some new potatoes if you aren't low carbing.

I put a small spoon of low fat philly in a slit in the chicken before cooking it.

chicken kebabs and rice? chicken breast cut into chunks. Stick on skewers with bits of pepper/mushroom/onion/tomato/anything you've got and grill for 15 minutes or so, turning occasionally.

Serve with rice and low fat greek yog. Yum! Grin

Tofu (cauldron marinated) stir fry.
Get a packet of nice stir fry (e.g. one with endame beans), a packet of noodles, the tofu, spring onions, ginger, garlic, chilli, limes. Put all the stuff you chop in first, then the packets (!), with lime squeezed over the top, maybe a dash of honey, and serve with soy sauce, sweet chilli sauce, lime wedges and beers/white wine.

Pasta.....mix a jar of pesto with low fat creme fresh, put pasta on(any you like), fry off some pancetta or bacon, mushrooms and onions. Mix pesto sauce with bacon, onions and mushrooms, mix in pasta...serve piping.. Easy

ladygahgah that sounds lovely, do you think its fattening?

I love fajitas, but would they be a bit naughty? We always stuff ours withsour cream, salsa, guacamole, cheese etc Blush

dh would have a fit if i served up noodle soup or tofu when hes been 'working at the coal face all day ' Hmm as he likes to put it

It's about 10 pro points on weight watchers, which I am on, so that's good for an evening meal...red or green pesto I prefer green for this

A nice juicy steak with rocket salad, shavings of parmesan, balsamic dressing.

I'm having tofu and stirfry tonight. Very quick. I only eat it when dh isn't here as he wouldn't eat it either.

You can use chicken instead or turkey and Wholewheat past if you wanna make it über healthy....but I like the bacon Wink

roasted peppers,onions,garlic,tomatoes and aubergines with tin pulses and herby couscous

white fish laid on tinfoil.add grated garlic and ginger,chopped spring onion and parsley or coriander(chopped).tiny drizzle oil.fold up and scrunch to seal.bake til cooked.serve with rice or new potatoes and broccoli

Well thanks for some amazing suggestions, have watched this thread so i can come back to it another night.
After looking online at some of these i actully made chicken noodle soup, it was gorgeous and i still have some left for work tomorrow Smile
