Trying to find a sponge recipe using a 9 inch tin. I want to bake one cake, slice in half horizontally, sandwhich together and ice etc.

The recipes I have found vary hugely in no of eggs and cooking time so am now thoroughly comfused.

Any help much appreciatef.

Could you not make 2 layers like 2 9 inch tins?
otherwise
120g Sr flour, 120g butter, 120g master sugar, half a level teaspoon baking powder, 2 eggs. Few drops of vanilla essence. mix all together (egg and flour last and gradually added) bake for 20 mins in presented oven 180' or until bounces back.
Then cool slice and ice yum!

in terms of egg worries i buy big free range eggs (classed as large) so would only use one for this cake but generally medium eggs are 2 per 9 inch sponge x
