Softer gingerbread men?

Can anyone recommend me a recipe for gingerbread men please? I've had a specific request from DH for ones which are slightly softer and chewier in the middle, as that is what his favourite ones from childhood were like. Could I make them chewier by rolling them thicker or cooking them less?

Yes! I think time the cooking v carefully, especially if you have a fan oven. With my fan oven i reduce cooking time by 10% and reduce temp.

I use a classic goodhousekeeping recipe.

Whenever I make Gingerbread men they are lovely when they are still warm but then they turn to rock!
