Lamb mince - inspire me please!

I've got two packs of lamb mince in the freezer and am lacking inspiration. Can anyone suggest something scrummy please?

Bobotie (sp?) I think it's an African thing - slightly spicy mixture with almonds and apple baked under a custard topping. I think the recipes I use say beef, but I'd have thought lamb nice too.

bolognese?/ pasta bake?
Chili? with jacket wedgies
with gravy onions and carrots? serve with mash and peas?
meatballs? serve with pasta or chips?
koftas? (yum) with houmus, pitta bread, cucumber, tomatoes etc
burgers? with chips or pitta and salad
stuff peppers with it? cover with cheese and bake?

I love lamb mince, its so much nicer than beef.

We do some in a passata based sauce, bit of red wine etc, cheese and mustard scone cobbler topping.

I do this in the slow cooker but it will work on the hob or in the oven.

Lamb mince, an onion, a few leeks, tinned tomatoes, rosemary, salt, pepper, redcurrant jelly, tomato puree. Proportions as you fancy. Mix and cook.

Serve with plain or tomatoey rice.

Moussaka, or a shepherds pie type mix stuffed into an aubergine. Top with cheese and bake.
