I have two fairly large skinless goose breasts in the freezer. Been there a while, so I need to think of something to do with them in the next week.....

Any ideas please?

Use them in a Goose & Ham Pie. Roast them, them when cold, slice them up and place in a cake pan lined with Water-Crust (or Short-Crust) pastry in layers with sliced cold Ham. Some stuffing might be a nice addition. Pop a pastrt lid on and bake in a hot oven (Gas 7) for about an hour. This is what I did with left-over Turkey and Ham after Christmas, and we still have enough left for lunch tomorrow.
