Frangipane - do you use almond essence?

I have made my first Bakewell tart this week and in many ways, it was lovely. But, despite having the amount of ground almonds stated in the recipe, it didn't taste particularly almondy. I have a vague suspicion that using almond essence might be considered cheating - is this true? Any other thoughts or tips?!

Definately not cheating, tv chefs cheat all the time!

Try looking at Jamie Oliver's 30 min meal book. Lovely recipe for frangipani tarts. He uses ground almonds and vanilla bean paste which you can get in sainsburys or waitrose.

Happy eating.
