Steak - need help!

Hi
I don't eat any red meat but am cooking steak for DP this week. About to go shopping and really don't know what type to buy and what to do with it, so all suggestions will be welcome

Ribeye if you can get it, if not sirloin, buy from a butcher if you possibly can. We usually cook ours in a griddle and then have some garlic butter with it.

Get the pan/griddle really hot before putting the steak in/on. Also, oil the steak and not the pan!

Deffo get pan as hot as poss first. Oil steak (filet or ribeye) and add plenty of salt and pepper to both sides. Then put in pan and don't move it til it's ready to turn over (3 mins for rare on inch thick steak) cook other side the same. Rest on warm plate in v low oven. Add sherry/maderia/port/red wine to pan, scrape up meatiness, plenty of pepper and bit of sugar/jam and cream if you like. Serve sauce over steak with chips/wedges and green veg. Yummo!

You can also add any juices from the resting plate at the end.

wow sounds great and not too hard!
Will be found trying this out in the kitchen tonight. Bought rib eye from the butcher close to where i work!

I know the sugar/jam bit sounds weird but it works, cranberry sauce works too.
