Easy healthy suppers for one

What are the things you cook when it's just you, you don't want any fuss, and you have a preference for something vaguely healthy?

I've just had mushrooms on toast - I did put a bit of blue cheese on top. It was delicious.

Tomorrow will probably be vegetables stir fried in a bit of chilli and garlic. I also really like poached eggs, and will go as far as a bit of grilled salmon if pushed.

Not sure if these are particularly healthy but my favourites are:

Liver, red pepper and leek casserole

Tinned sardines on toast

Cheese and tomato omelette

And if feeling like cooking, bacon wrapped haddock or other white fish

Loads and loads of fruit salad

Pasta. I get a simple tomato sauce going and add a little chopped chorizo or smoked bacon and red peppers before stirring in some cooked pasta and finishing off with some fresh basil and parmesan

Frittata. A couple of cooked new potatoes diced, a tomato, some chopped spring onions and a little chopped pepper or spinach gets stirred into a couple of eggs and cooked in an omelette pan. When the bottom has set, grate on a small amount of cheese, pop under the grill and toast until browned. Serve with salad

Pasta with peas and pancetta and lots of parmasan.

Baked sweet potatoes with some Boursin.

Smoked mackeral and beetroot salad.

Not very healthy but often just a cheese toastie.

I forgot about smoked mackerel - I love it! And baked sweet potato is a great idea, never tried that.

Marking spot. If the kids are with their dad and it's just me here I end up with beans on toast or ham and cheese toasties because I cannot be arsed.

Veggie is good for me. I'm starting with a roasted sweet potato tonight, I don't have boursin but I do have some gorgonzola!

Ooh yes, I forgot about stuffed pitas. Used to do that a lot but haven't had it for a while.

Also fresh soup from the supermarket is a good one at this time of the year.
