Birthday cake recipe that will go with sugar paste icing

Hello,

I'm attempting some birthday cake extravaganza! I have my DD and DS joint party coming up, and have seen a picture of two Wot Wot cakes that I hope to copy. The cakes will have sugar paste icing all over and a collection of mini marshmallows on the top.

I'm planning to make the cakes soon and freeze them, before defrosting and decorating the day before the party.

I'm looking for a two different cake recipes that will compliment each other (one cake for each DC), and that will go with sugar paste icing (I've not used it before). The cakes will need to be fairly tall to pull off the design, so Im thinking to sandwich two together to add height, or find a recipe that will make a big cake. I'm planning to use an 8" round tin.

I'm thinking of trying the BBC Good Food Ultimate chocolate cake for one (has anyone frozen this), and would welcome suggestions for the other!

I'd do a confetti cake.

250g very soft butter
250g caster sugar
250g SR flour
4 eggs
2tsp vanilla

Put all the ingredients in a bowl and whisk until only just combined.
Mix in a tub of hundreds and thousands or any sugar based coloured sprinkles.
Split between two tins and bake at 160.

The sprinkles dissolve so yet you get a multi-coloured speckled sponge.

It sounds great! Little kids will get a big kick out of the sprinkles!
