How can I make a meal out of mostly spuds?

I have a large bag of spuds and not much else in.

A few green beans. Am hunting for some pulses but no luck.

Might have some peas in the freezer.

Ummmm...... potato surprise? (the surprise being that our dinner consists only of potato).

Have you got any tomatoes in any form - fresh/tinned/passata even puree? Plus some spices in the cupboard?

If so there are quite a few options. Ok mostly all a variance on potatoes in a spicy tomato sauce with peas and green beans.

If no tomato products you could still do a potato and pea curry with stock & spices instead as long as you do have some spices.

Slice potatoes, and whatever other veg you have to hand.

Layer in a dish, seasoning between each layer, and then pour some kind of sauce over the top.

Tinned soup, especially a creamy variety like mushroom, works very well as the sauce. If you don't have any soup, then some kind of stock, made with a stock cube.

Cover the dish with foil and bake at a medium heat until potatoes are soft. Take off the foil and dot the top layer with butter, and continue to bake until the top is browned. If you have any cheese then you could also add that on the top.

Have you got any curry paste/sauce? You could do a curry with an onion, potatoes, peas and the green beans.

No omelette. Pregnant. Eggs are bleurrrghhhhhhhhh.

No fritters. Pregnant. Fried stuff is bleurgh.

No jacket spuds. Too small.

No cheese and potato pie. Son dairy allergic.

Yes. Curry-ish it is I think. Potato and manky old green bean curry in coconut milk. Found some carrots and masoor dahl too. Will do the rice with some manky old tomatoes I just found plotting at the bottom of the veg drawer.

Hunting through my cupboards for something to add to spuds I have discovered THIRTEEN open bags of flour and SEVEN open packets of spaghetti.
