Butternut squash and sage risotto with toasted pine nuts

Roasted in chunks and added to taglietelle with green olives, taleggio cheese, rocket and sage & lemon butter

Roast it in olive oil and herbs and add to couscous with feta, mint, chopped tomatoes and a squeeze of lemon. Lovely.

just bake them...like a potato, but cut them in half first.

fill with feta and smokey ham and fall face first into them to scoff.

Soup is also amazing, esp if you roast them first.

I love butternut squash soup.

Roast with onions and other veg and make some with chinese five spice and some with coconut milk and chilli. It freezes really well.

Grate one up and use instead of carrot in cake-making. I can't find the exact recipe I had, but this is pretty close:

I also used some in stew recently - it was great as it dissolved into the 'gravy' and made it lovely and thick. :)

Cook it in water and cover with light curry flavoured oil and some of the cooking water - not too much sauce. delicious with rice or bread or with a meat curry.

Nigella has a Thai pumpkin and seafood curry recipe on her website that is gorgeous with butternut squash. Can't link as haven't worked out how to use phone properly yet but it is definitely worth checking out.

Back at PC so here is the Nigella thai curry one. I just noticed a thai pumpkin soup recipe on there too that can be done with butternut squash instead.

Jamie Oliver's Hamilton Squash recipe is good and you can tinker with the stuffing to include things you really like (eg it includes sun dried tomatoes but I don't like them).

Another easy one is just to halve the squash and scoop out the seeds then slash the 2 halves a bit and drizzle with oil and s&p. Roast until nealry done and then scoop out the filling and mix with some lightly fried red onions and some cheese plus anything else you fancy. Stuff back into the shells and cook until all is golden and oozing.

These are ace as Sainos delivered a 2.5kg mf'er last week. It was the size of a large pumpkin. I made a couple of risottos but still have 1.5kg of roasted butternut squash in my freezer.
