Chocolate snowcap biscuits

Cook: 15min

Makes 12

This is based on the much-loved American chocolate crinkle cookie, which cracks dramatically on top, the chocolate in sharp contrast to the snowy-white coating of icing sugar.

100g soft butter
150g unrefined granulated sugar
2 medium eggs
Half-tsp vanilla extract
160g plain flour
30g cocoa powder
Half-tsp baking powder
60g icing sugar

METHOD

Heat the oven to 170C/Gas 3. With an electric mixer, cream the butter and sugar until pale. Add the eggs one at a time, beating well, and the vanilla extract.

Sift in the flour, cocoa powder, baking powder and salt, working with a rubber spatula until smooth. Cover and chill for two hours.

Place the icing sugar in a shallow bowl. Take a tablespoon of the mixture and roll into a ball. Roll in the icing sugar until heavily coated.

Place on a baking tray lined with greaseproof paper and bake for 14 to 15 min until firm outside, but still a little squidgy inside. Leave to cool on the tray for 5 min, then cool completely on a wire rack. Store in an airtight container.

Whywould you leave them to cool completely and store them in an airtight container? Wouldn't you scoff the lot whilst still warm??
