Please share your best goose recipes

I'm doing goose for the first time NYE- anyone any food tips about stuffing, accompaniments etc? Thinking of doing a ham as well as there are 8 of us (and I'm not sure the dcs will like it anyway)- will that go ok do you think? Thanks

Me too. Any recipe i've googled is fruity stuffings which i don't really like...

The one that springs to mind is Deliah's Goose with prunes and armagnac www.deliaonline.com/recipes/cuisine/european/french/roast-stuffed-goose-with-prunes-in-armagnac.html, but if you want to avoid 'fruity' then how about a simple lemon, thyme and parsley stuffing?
