Hello, am doing dinner for 6 on new year's eve, one of whom is veggie. I wanted to do something that involved as little last minute faffing as possible.

I was thinking of a lamb tagine with cous cous for the meaty main. Does anyone have a recipe for a tasty veggie tagine? Or something similar please?

For veggie, replace lamb with chick peas and add cinnamon sticks.

I do

Tin of toms, cherry toms, aubergine, courgette, red onion, peppers, maybe some sweet potato or butternut squash - fry up for a few mins - add tin of chick peas, green oxo cube, pinch smokey paprika, bay leaf and cinnamon stick; simmer for 30 mins or so, serve with cous cous
