Vegetarian dinner party suggestions please

We've got vegetarian friends for dinner tomorrow night and I need some ideas for nice things to serve them. Unfortunately, my awkward husband doesn't eat mushrooms or aubergines. I've already given them my go-to veggie dinners - butternut squash risotto, red onion and goats cheese tart and falafel with mezze style salady things - and I'd like to make something different.

If you're vegetarian, what do you like people who've made an effort to give you on a special occasion?

We're not veggie but we really like leek and butternut canneloni and veggie cheesy bread pudding

I like all hte things you mention. Plus:
Veggie curries with chickpeas and spinach, or any veggie curry.
Veggie stir fries or veggie fajitas. Maybe with halloumi in.
Nut roast or lentil bakes, those hearty 70s things, but with spicy sauces and nice salads.
Tortilla with crispy bread and salad.

Oooh, yy to chickpea and spinach- Yottom Ottolenghi does a great one with sweet potato- here

Thank you! Awkward husband can't believe how quickly you've come up with suggestions and recipes - still doesn't get mumsnet very well. Going to try the parsnip roulade, I think. Anything rolled up has got to be impressive!
