Ideas for leftover poultry

This is a problem we have all year round, but I'm sure other people will be wanting ideas for using up roast chicken / turkey.

We currently use it in:

Risotto
Stir fry with ginger, soy and honey
Sandwiches (boring)
Curry with chopped tomatoes & veg
Mixed with veg & white sauce (maybe with mustard) with pastry on top
Mixed with veg & white sauce (maybe with mustard) with sliced potatoes on top

Anyone else want to share their suggestions?

Turkey: we'll we're having a scaled down version of Christmas Dinner tonight with the left over turkey as Dp got too drunk when cooking yesterday and didn't eat anything!

Also making spiced turkey casserole.

I have ham as well which I'll be making into a cheese and ham quiche and ham and leek pie.

but based on what I've got left, I'll probably do pies filled with turkey, leftover sprouts, carrots, and bread sauce. Once I manage to get shortcrust pastry.
