My salad has frozen. Help.

Fridge has malfunctioned and my salad has frozen solid. It is going to be like dead pond weed when it thaws Sad. What can I serve my fresh salmon starter on instead? (It is already cooked and in the fridge).

Any suggestions gratefully received as all shops now closed and I have a headache and have run out of imagination and creativity.

blinis?? no need to go the whole hog with the yeast batter, but make teeny american pancakes, salmon on top, sour cream and a pinch of herb??

Thank you - that sounds nice but I haven't got any sour cream...

Salmon is poached in orange and cranberry juice, garnished with cranberries. I was going to serve it on a rocket salad. The only green things I have in are sprouts and peas - not very inspiring - oh, and a tiny bit of fresh parsley........

Melba toasts? Cut the crusts off sliced bread and bake it in the oven to make it look fancy. Or just as is - sounds delish.

pea puree instead then?? maybe whizz in some rocket so as not to waste it.

or a rocket pesto.....any pine nuts or almonds, whizz the lot in a blender with some olive oil/lemonjuice

Salmon on a bed of wilted rocket sounds lovely to me! Stick in steamer for a few seconds to warm through then plate up. No bugger will question you if you serve it with panache.

Oooh - pea puree sounds like a possibility. I guess the rocket would taste ok in a puree, would it??

I wondered about melba toast, but thought it might be a little bit dry.

Have you got mint sauce? You could add some of that to the peas.

I think I will assess the rocket when it thaws, and consider whether to serve it wilted, or pureed with peas. You never know, it might turn out to be a wonderful new recipe Grin
