I'm doing rolled rib of beef for Xmas day. It weighs exactly 8lb.

I'm trawling the net to find out how long to cook it for and getting so confused!

Some sites say for medium, to cook it for 14 minutes per lb. Some say as long as 25 mins per lb. How can they both possibly be right?? If I beleive half of the sites, I'd end up cooking it for a couple of hours. If I believe others, it'll be in the oven for 4 and a half!!

I want it to be right! Waaaaaaaaaaah :(

I cook beef 15 mins per pound plus 15 minutes for rare (8lb would be 2hrs 15min) and 20 mins per pound plus 20 mins for medium (3 hours for 8lb piece).
I never cook it more than medium.
I have the oven at about 200 degrees & turn the meat every 20 mins.

anyone can post stuff on the internet. Pick one that is reliable and just stick with that.
bbc good food is usually good for basics here is their roast timer

are you sure the 25 mins is not at a lower temp? It is more typical of a Slow Roast.

Rib is a good enough cut to cook hot and fast though.
