Stuffing recipe

I'm doing lamb for Xmas dinner, and I need a stuffing for it. The slightly spicy one we normally do is utterly delicious, but the dc don't like it.

I can't find any other recipe that doesn't include as a significant ingredient:

Sausagemeat or ham - we don't eat pork
Mushrooms or peppers - the dc hate
Cheese - we're dairy-free

Any suggestions? I don't make stuffing often enough to know how to wing it and invent one myself.

I think you need to make it on a breadcrumb base, so (making this up a bit) I would:

  1. take about 300g of breadcrumbs
2 chop up a generous bunch of flat leaf parsley and a small one of mint 3 chop up a handful of apricots and a handful of raisins and about 100g flaked almonds
  1. combine all with two eggs and about 150 g butter
  2. Season with salt and pepper- some spices would be nice but no need if the children don't like them

You could probably also make this work usung rice as the starch; but I have never tried it

add breadcrumbs and a chopped fried onion. Normally I would bind with an egg but I don't know what you could use instead if you are dairy free.

The stuffing I normally make is on a rice base, which works well. I read somewhere about using a mixture of breadcrumbs and porridge oats. I might try that, or perhaps just breadcrumbs. Should they be white bread?

Eggs are fine, they're not dairy Wink. Definitely include fried onions.

I couldn't use butter, but I read somewhere about using suet instead. I wonder which would be better, suet or oil.

How would it be if I used dried cranberries and chestnut purée as well? Do you think that would work?

With lamb I do rice, onions, apricots and cranberries.
