Trifle - how soon can I prep?

Making a sherry trifle for Xmas day, how early can I make it?

Would like to do it on 23rd but I think the cream might go off.

Any suggestions?

I'm doing mine on the 24th and custard and cream on the morning of the 25th.

I find that by the second day the juice runs to the bottom of the bowl and makes everything soggy.
