Did you use butter or margarine? Did you cook the flour roux properly before adding the liquid? Are you using some unusual type of cheese like low-fat?...

Thanks! I think maybe I didn't cook out the roux long enough, as i used all the normal ingredients, butter flour milk cheddar and mustard... was a little stressed out Blush and rushing to.get dp and ds fed! I managed to burn the gammon joint and over cook the potatoes as well. oh well !
