How hot are scotch bonnets?

for the ham hock recipe in Jamies Christmas. I don't like hot food and am going to feed this to e fussy 3rd old! Should I use less than the 3 the recipe says or use a normal chilli. May not be able to get them anyway as have a fairly small supermarket.

Scotch Bonnet chillis are pretty fierce and the hot part of any chilli are the seeds. If you don't like hot food but want the 'bright' flavour of fresh chilli flavour use one rather than three & scrape out all the seeds before adding to the dish.

Better stick to chillies you know when feeding a 3 yr old. I am used to quite hot food and it burns my mouth.

Sick to what you know if you are feeding anyone where you are not sure of their tolerance levels.

The hottest bit is actually not the seeds themselves but the white pithy bit that holds the seeds to the flesh
