Leftover roast pork

Please inspire me with a nice way to use up some bits of roast pork I have in the freezer. Am trying to make space in there and also do some economical meal planning before the excesses of Christmas Grin

I don't do sweet and sour (its just wrong...) but curry's an idea. No gravy so the sandwich idea won't work. But thanks for the ideas.

Stir-fry, with egg fried rice, soy & chinese veg. Yum - I want to roast some pork just for this now.

Oooh, mix it with BBQ sauce (ketchup and sugar and a little vinegar) and five spice, then serve in a bowl of noodle soup (stock with noodles, a halved hard boiled egg, some greens/spinach, sweetcorn, seaweed, mushrooms, sliced spring onions, sliced Ginger ...whatever you have)

Shred it, heat it in a pan and serve with salad, chutney in a wrap.

This is weird, as I just came to this page to post the exact same question OP. The ideas above are bit too labour intensive for lazy old me!

I have some cooking apples and am thinking I should put the 2 together some way?

I get where you're going with the cooking apples, esp if you stir in some cream/creme fraiche. Not sure that will work for me though. I think you need tender, slow-cooked type pork for that kind of combo, and my bits of pork are a bit on the crispy/chewy side Blush

Shredded and in a wrap with some chinese spices are the way to go...
