Tonight, I am making food for some friends. I'm doing a ridiculously easy Delia recipe for salmon with fresh pesto, breadcrumbs and pecorino on top. It sort of forms a tasty crust on the salmon. Anyway, have just found out one of the guests doesn't like salmon so wondering if I can do the exact same topping on a piece of chicken. I can't see why it wouldn't work but I'm so lacking in confidence with cooking, I thought I'd get some outside opinions :) Also any thoughts re. how long the chicken will take compared to the salmon (I'm guessing longer?)

Any suggestions appreciated.

I think that crust would be delicious with chicken too. I'd give a chicken breast about 20 mins in a hot oven.

20 mins for chicken, about 10 for salmon I reckon.

Make sure you dip your chicken in a little flour followed by some beaten egg first. Then the crust will stick to it.
