A fabulous but quickish vegetable dish that I can take to a party? Spicy is good

Vegi curry? I do one just with a tin of toms, some madras curry powder and any vegis and mushrooms I have to hand, add more water if needed and if its too hot some sour cream or yoghurt cools it down, its yummy!

roasted veggies?

Peppers, red onions, courgettes, potatoes (sweet + bog standard), tomatoes etc etc.

Coat with olive oil and LOTS of garlic and dried chilli flakes, put in the oven at 200 for about 45 mins or so.

I sprinkle feta over for the last 10 sometimes or add parma ham (obv not for veggies).

Spicy Couscous. Can't rememeber exact measurements but fry onion, garlic, green & red pepper & chilli in olive oil, add couscous, can chopped tomatoes, can chick peas & veggie stock. Cook 'til couscous is done - about 5-10 mins depending on brand. Can add chopped dried apricots also. Before serving (can eat hot or cold) add S & P, lemon juice & fresh mint & parsley. Use lots of herbs as it makes it really fresh tasting. Sorry about lack of measurements but I am a bit of a slap dash chef!
