Kadyann, forget it! If attempting a 12" square Victoria Sponge, the outside will be well and truly crisp before the middle is done and you will wind up with a big flat hole in the middle. In fact, it is not easy to do a 12" Square Madeira cake, although it is possible (we did many test bakes here at work to prove that it could be done).

Go back to basics; if you are going to ice the cake, then you probably want to do that the day before, so a Madeira would be a better bet as a Victoria will begin to go stale. Secondly, if you are going to ice it, then bake 4 cakes 6" square and join them up under the icing - no one will be any the wiser. You will have no timing issues then.
