Vegetarian dish that meat eaters will like?

I've got a vegetarian guest on Saturday and her dp isn't one. Can anyone recommend a dish I can do for all of us that's vegetarian but he should like? I love it anyway and will eat anything. She doesn't like food too spicy. I could do 2 dishes but would rather do one tbh. TIA

Is your vegetarian the cheese-eating or non-cheese-eating variety? Vegetable lasagne could be an option (I make my 'red layer' by sauteing onion and garlic, adding chopped red peppers, courgette and mushrooms and cooking for a bit to soften the veg, then add tinned tomatoes and tomato puree, oregano, salt and pepper)

My DH (who LOVES meat and thinks a meal isn't a proper meal without it) likes veggie risotto - especially roasted veg (peppers, courgettes) or butternut squash.

Or second vote for a veggie chilli.

Gordon Ramsey does a delicious Stilton and mushroom puff pastry thing with caramelised onions that used to be my Xmas dinner option when I was veggie. Is easy but looks like you've made a real effort

Would agree with veggie risotto - I make a nice one with asparagus, leeks, broad beans and jarred artichokes.

Dauphinoisse with puy lentils is another good idea (I like it with savoy cabbage) but it's a more 'obviously' veggie meal than the risotto.

Caramelised onion quiche with garlic roasted new potatoes and a salad with a mustardy dressing.
