Menu for pre Christmas dinner for fussy guests

That's a bit mean, but out of 8 people one is a non meat eater (but will eat fish), one won't eat cream, and one is coeliac and on a diet. So, heaven help me, I need a really impressive menu that will satisfy them all without me cooking umpteen different things. I don't like singling people out and giving them different food so am keen to find something suitable for everyone.

Am thinking:

Starter: smoked fish and smoked meats (smoked salmon, fish pate, prosciutto etc) with olives etc. Will make crostini and get some gluten free crackers

Main: Fish pie (but might have to be careful re the white sauce I guess), peas and carrots, perhaps? Not v glam but could be made exciting if I chucked some Lidl lobster in maybe? It will probably have to be fish pie unless I do a roast and stick a portion of fish in at the end.

Pudding: was thinking some kind of home made jelly, perhaps blackberry and muscat until I remembered gelatine will be a no no for the veggie. Then I thought pavlova but that has cream (and cornflour using my recipe but could prob. find another one). I suppose I could do both.

Finally: cheese and crackers and grapes and chocolate.

Pudding is the tricky one. I'm not good at puddings. Help me!!

I had a really nice feta cheese pasta which was lovely had peppers etc in and it was the alternative to the turkey. As for pudding how about a mini dessert section? This way you can make sure there is something for everyone?

[Faints at the thought of the work involved in mini desserts]. I could do jellies and some kind of cake I suppose.
Feta pasta sounds lovely but should have said the veggie bloke doesnt like peppers....

Chocolate almond torte for pudding! Very easy, can be prepared in advance and chucked in the fridge, gluten free and it looks at lot more work than it is. You can over whipped cream and raspberry coulis with it, that way the person who won't eat cream doesn't have to have it plain.
