a really stooopid question about breadcrumbs

if I want to make fresh breadcrumbs to coat something - then do I dry the bread out in the oven before it goes in the foodprocessor, or dry the crumbs out IYSWIM

jsut blitz them as they are

or cna toast them then blitz them but that tastes nuttier

I use older bread, a couple of days old or more and if it's still moist I leave it out on worktop for a couple of hours.

Also freeze bags of these breadcrumbs, they defrost really quickly. V useful when you're in a hurry...
