I'm making a Christmas cake for the nursery where I work. It will be a basic sponge cake with jam and buttercream and iced with roll out fondant icing. How long can I make it in advance. We are having Christmas lunch next Wednesday and our party the following Wednesday. I'm not sure what day we will be serving the cake, but probably after Christmas lunch.
