ok, well thats it really!!

I went onto a paul bradford sugarcraft demo last week, and he said ALL his cakes were oil based instead of conventional butter based, as this makes them slightly firmer to ice etc!

He let us taste one, and it was divine and so moist.

So i am looking for some, and i can't find any in metric, well i have found one, but that's it, and was looking for more?

wouldn't you just substitute the butter for oil in the same quantities?

This chocolate courgette cake is the only one I've made with oil, but if you're looking for something to ice then this is probably not the way forward. Yummy though. Grin (In fact, arguably the best use of courgettes)

Here's one:

Yogurt cake

(all measures are made with a small pot of yogurt)

3 pots of sr flour
2 pots of sugar
1 + 1/2 cups of yogurt (whatever flavour)
3 eggs
1/2 cup of veg oil

Works better in a tin with middle, ie for a ring shaped cake.

I second that purpleturtletoise - chocolate courgette cake is one of my top favs - I hate dry sponge.

And the number of people I have tricked into eating courgettes.... Grin

Xmas Grin Well i wasn't sure if it was the same amount of say butter melted, then substitute with oil, i'm confused!!! Xmas Confused

Oo will try those and if anyone has any chocolate based ones that would be great too?!

I was going to suggest the same recipe as thestringcheesemassacre. It's really good, have made several times. Seems lighter to me than a sponge made with butter or margerine.

yes it's fudgey good, and a doddle to make.
I make the icing a little looser than the recipe though.

I often substitute canola oil instead of butter in recipes with no problems.

Try an American website like Epicurious for measurements in cups.

This is impressive.
