Left over pork shoulder...???

Did a slow roast yesterday and have quite a bit of left overs.

Doing stir fry tonight, don't think this meat will be suitable, so want to think of some use for it tomorrow... TIA.

Warm it up in some stock, dunk into a spicy BBQ sauce, stuff into some kind of lovely bread roll/muffin/cob, add a mound of homemade coleslaw, shuv in gob.

Use it for a pork stroganoff (onions, mushrooms, paprika, mustard, creme fraiche) and serve with thin chips or rice.

Make a kind of jambalaya with onions, celery, peppers, smoked bacon, kabanos sausage, tomatoes, rice, stock, southern american spices (paprika, kayene, garlic, chilli, thyme, cumin) and add the pork to that.

Quesadillas. Mush up a tin of drained black beans, grated emmental, chopped spring onions, your pork, cumin, thyme. Put between 2 tortillas and cook in a dry pan til gold and crisp on each side. Serve with home made salsa (chopped toms, spring onions, chopped corriander, lime juice, olive oil, salt & pepper).

Chuck in a pan with fried onions, garlic, fennel seeds, glass of wine, reduce til the wine's almost gone, add in a tin of toms, simmer for 20mins til toms reduced, season to taste and serve with pasta.

Just what I need, I have a whole shoulder in the freezer that needs eating, its massive, think it will take 2 days to defrost then I'll cook it slowly overnight.
Can i freeze the meat once cooked, or will it go horribly dry.
I really should have halved the shoulder before freezing but didn't as I intended to cook it for a crowd.
