why are leaks sold without the greens?

which I think is the best part...
my leak and potatoe soup is just not the same.
a couple of years ago more green was left on them.

There's still plenty of green on most leeks if you avoid the ones that are super-trimmed for prepacks. They take off the tougher, untidy leaves, however, because mostly customers object to paying full price for something they're only going to throw away.

I struggle to get DH to eat the greens & not just chuck them :(.
