aubergine?
I have made a moussaka(sp?) but need more ideas!

Slice them thinly (so you get wide flat slices IYSWIM)
Brush with olive oil and grill until brown
Put mozerella, tomatoes on top and grill again (can also use basil,olives, capers etc according to what you like)
Lovely with salad

Ratatouille (or something vaguely ressembling it)

Gently fry sliced onions and garlic. Add sliced or chunkily chopped peppers in different colours, cubed aubergines (don't peel first), a tin of tomatoes, a generous amount of mixed herbs and greshly ground black pepper, simmer for a little while, then add quartered fresh tomatoes and cook for a few minutes more, until the toms are just barely cooked but before they start falling to pieces.

You can also add olives, mushrooms, sweetcorn...whatever you fancy really.

can you make aubergine crisps? I oven bake till crisp (never done it, just a thought)

If you want to be reeeealy unhealthy, you could slice them as Hornbag suggests, degorge by covering with salt and leaving for a while, then rinse and pat dry, dip in batter and fry. Oooooooh yummy!

roasted veg: chop and mix with peppers, onions, sweet potato, tomato or whatever you fancy, plus a little oilive oil and seasoning and roast in the oven

stuff them eg with onion tomato cheese herbs mince again whatever you fancy

Aubergine Parmigiana - Slice aubergine, brush with oil and grill.
Heat a tin of tomatoes with a couple of cloves of crushed garlic for 10 mins or so.
Sandwich aubergine slices with garlicy tomatos in a baking dish. Cover with a mix of half cheddar and half parmasan cheese.
Bake until cheese looks yummy.
Mmmm.

We also just split them in half, cut slits down and push in garlic then roast them in the oven.

And use them for aubergine and potato curry.

Bake them in a hot oven for about half an hour, and then remove the insides, mash with tahini, clove of minced garlic and lemon juice for baba ghanouj dip, nice with pita bread.

Aubergines always come out nicer if you salt them for a while (then rinse) before cooking.

We make ratatouille with ours (with courgette and peppers), and sometimes a sort of Moroccan dish with chickpeas, tomato and spinach.
