I am wanting to make a selection for the school staffroom so am seeking tried and tested recipes please.

The best chocolate chip cookies in the world:

125g butter, softened 

100g light brown soft sugar 

125g caster sugar 

1 egg, lightly beaten 

1 tsp vanilla extract 

225g self-raising flour 

½ tsp salt 

200g chocolate chips



Cream butter and sugars, add egg and vanilla, 
sift in flour and salt, then choc chips.

Roll into LITTLE balls (as they grow a lot) put about 6 on a baking tray (space out!)
180°C/ gas mark 4 for 9/10 minutes

They will be gooey to touch as they come out, but they harden as they cool. Leave to cool in tray for a few minutes before transferring to a wire rack.
