Ground rice/almonds

My DM used to make a Bakewell tart that substituted some of the almonds for ground rice.
Does anyone know how to do this (may be a war time thing)?
May have been ground rice plus milk? egg? then almond essence.

Yep - I make my Bakewell this way all the time, tis delicious and I can eat the whole lot in one go

125g butter
125g caster sugar
1 egg, lightly beaten
125g ground rice
½ tsp almond extract
2 tbsp raspberry jam

This is for a 19cm tart dish. I make my pastry with 180g flour, 90g butter and an egg yolk, line the tart dish and chill it for 30 minutes.

For the filling, melt the butter in a saucepan over a gentle heat and add the sugar, let that cook gently for a couple or three minutes. Remove from heat and stir in the egg, ground rice and almond extract. Spread the raspberry jam over the pastry base, pour in the mix and then decorate. Cook at 200c for about 45 minutes.

Ooh, thank you, just what I was looking for. I always had the impression that ground almonds were 'juicier/moist and that some liquid would be needed.

I think my DM's version came from the war/rationing years but I need this one for a greedy pig someone allergic to almonds :o
