Um. What do I do with samphire?

I didn't do my shopping until late today so I was there when they were marking down the going-out-of-date stuff. The samphire was only 10p, so for that price I thought that I had to try it.

But what to do with it? - is there any more interesting treatment than simply boiling it.
We are having roast lamb tonight.

Sounds good! We will have potatoes (mashed and roasted), samphire with garlic, Chantenay carrots and mushrooms a la grecque.Smile

My mother always used to do it boiled with a cubed apple and serve with melted butter. I half recall some rosemary being involved somehow as well, which would make sense if you are serving it with lamb.
