Christmas Cake Recipe (foolproof)

I want to make a Christmas cake. My family think I'm bananas but I think it will be nice. Should I make one from scratch, in which case, which one, or hot foot it to my nearest Waitrose and buy Delias' cheat pack?

I'm a fairly competent baker but don't have all the kit and a very small galley kitchen.

This is the recipe I do for my family but use different sugar depending on how dark you want it, white very light or dark brown for a heavy/dark cake.

1pound butter
1 1/2 plain pound flour
1 pound sugar
2 oz self raising flour
10 eggs
2 1/2 pounds sultanas
1/2 pound cherries
1/2 glass sherry

Soak fruit in sherry over night
Cream the sugar and butter until fluffy
Add the eggs and flour
Mix in the fruit

Bake in moderate oven, gas reg 2 for 4-5 hrs

I make a six inch round and 2 x 2lb loaf tins with the above mix, just reduce the cooking time
