2lbs of mixed red and white onions, very thinly sliced
2 tblspns olive oil
2oz unsalted butter
5tblspn red wine vinegar
5tblspn port/brandy (whichever flavour you prefer, the alcohol cooks out btw)
4oz soft brown sugar

in a large frying pan, melt butter in oil and add all onions.
on a very low heat, stir and move onions continously and cook slowly until all are soft but not coloured. (the slower you cook them, the better the flavour)

once all are very soft, turn up the heat to dry off all moisture (again, keeping them moving all the time to prevent colouring) - add the wine vinegar, alcohol (or water if you prefer) and the sugar at the same time and cook again for around 10 mins, until the liquid has almost all gone and onions are sticky and 'spreadable' if the mix is too dry and the onions are still firm, you can add a little water and keep cooking

put into sterilised jars and seal - this keeps really well in the fridge btw.

am now drooling too Grin

That's the plan. I was on the receiving end of such a gift last year, and it was wonderful! Can't wait to get started and stink my house out with the smell of onions Grin
