Help! Carrot cake icing...

How do I make icing for a carrot cake?
Its dh's birthday tomorrow and every cake I've ever made has been a disaster (must practice when it isn't someone's birthday!) - so I bought a Betty Crocker carrot cake mix. Just opened it and it doesn't include the icing bit (so that nice pic on the box and the bit on the back that says "all you need is 3 eggs" is rubbish!). Carrot cake icing is different isn't it? The cake is made in 2 8-inch tins. So what do I do? Idiot's guide please!

I normally make a frosting for carrot cake using cream cheese, icing sugar and lemon juice. If you want the quantities let me know and I'll dig out my recipe.

OK. I have Icing sugar and lemon juice. Will Philadelphia do for cheese? Quantities would be great Angiel.

Ok, I forgot you need butter as well. Philadelphia would be fine.

50g butter
50g cream cheese
225g icing sugar
tsp lemon juice

Mix it all together until fluffy and creamy. It makes quite a lot and it tastes lovely. Hope dh has a good birthday.

Don't use the very low fat cream cheese though as I found out the hard way that it makes the icing go all runny. Middle or full fat cheese is better.

Definitely the cream cheese option, try adding a little nutmeg for something different.

Cream cheese, soft brown sugar and a squeeze of orange juice is very nice too, and a pretty light brown colour.

Lime juice is great as well - I made carrot muffins at weekend with cream cheese, lemon and lime icing and yes, I did sprinkle some nutmeg on as well!

Well I used Angiel's recipe with Philadelphia Light and it seems fine, tastes yummy. DH hasn't seen it yet; friends coming round later for the taste test!
