What can I do with pate?

I have 3 unopened packs of pate, all of which need eating over the next week. Any ideas? Seem to remember a recipe where you stuff large mushrooms with pate and bake them in the oven (dh loathes mushrooms though...)

I did think about freezing it - but it's quite near the end of its shelf life so I'm a bit wary. I've never had Beef Wellington - just looked at a recipe and it sounds yummy (if expensive!) but only uses 85g of pate. Stuffing chicken breasts is a good idea.

my dd 2yr 8 months loves it when we go shopping..picks up brussels pate...picks up crumpets...picks up lurpack...she knows what she likes already!!..oh yteah, on crumpets too
