silverside. 750g. how long to cook?

Want it just well done. Not overcooked but no blood.

Do I cover in oil or foil? Basic instructions please. Only ever cooked chicken.

I'd pot roast a small piece of silverside. Sit it in a big enough casserole dish (cast iron is best) with a quarter pint of liquid, on top of some chunky chopped onions and root veg, season well, pop on the lid and bake for about 2-3 hours in a very cool oven - 140C or Gas 1

I'd have left it uncovered, on a rack in roasting tin at 180 degrees for about 1 & quarter hours then wrapped in foil and rested somewhere warmish for 30mins to let the fibres relax. Resting is important for tenderness!

Well I did 60 mins, in water not on a rack covered.

Then found out that it should be uncovered so took foil off for 30 mins. I did rest for 15 mins in foil..

It was delish and cooked exactly how I wanted it.
